Ingredients:

– 3 tablespoons olive oil

– 1 cup chopped onion

– 3 cloves garlic, minced

– 1 cup sliced carrots

– 1 cup sliced celery

– 10 cups chicken stock

– 1/2 cup dry white wine

– 1 bay leaf

– 1 teaspoon dried thyme

– 1 1/2 cups shredded cooked chicken
